Cookery Workshop:  Canning! 

$40/ person. Discount for multiple classes

Hands-on, “can along” series of workshops designed  to provide you with a full understanding of water-bath canning to help preserve the summer bounty.

· Learn when it is safe to can using the water-bath method - and why;

· Understand the process, and safety & hygiene requirements;

· Receive practical tips learned over two decades of preserving food;

· Watch a canning demonstration;

· Can a jar from start to finish;

· Take home hand-outs, recipes, & a full jar.

Classes may also be conducted in your kitchen (with an additional fee for mileage & set-up)

 

Gardening & Cookery Workshop: Growing and Using Small Fruit

Saturday June 5, 2010, 10:00 AM to 3:30/4:00 PM - approx! (with 1 hour break)

$125/ person - Gourmet lunch included.

If you are not growing small fruit in your kitchen garden you should! In this class, you'll learn about the history and the cultivation requirements of some of the more common small fruit (strawberries, blueberries, raspberries and other brambles) as well as some more unusual ones (currants, figs, ground cherries etc). We'll discuss and/or demonstrate how to select, plant, grow, maintain and harvest small fruit for your kitchen garden or your edible landscaping. We'll discuss some specific cultivars and their fruiting calendar. After a lunch break, we'll use the small fruit that's in season in early June (strawberries) to demonstrate some fun and tasty things you can create at home to amaze your friends: minty strawberry sorbet, strawberry liqueur, strawberry sauce and we'll also create a spectacular strawberry parfait!

Cookery Workshop: Sorbets, Ice-creams and Other Cool Desserts

July 14, 2010 - 4:30-7:30 PM

$65/ person

In this workshop, we'll make one ice-cream, one sorbet, a mousse, and a coulis. We'll learn when and why to poach fruit, and we'll make a couple of layered desserts like a fool, a parfait or a jubilee or ...?. And we'll discuss classic and not so classic combinations and additional presentation ideas. See... no need to heat up the kitchen to make dreamy refreshing desserts (which of course, we have to eat afterwards!).

Recipes and degustation included.

Planning For Your New Kitchen Garden

Saturday, October 2, 2010,  10 AM to 4:00 PM (with 1 hour break)

$125/ person - Gourmet lunch included.

This gardening workshop will teach you everything you need to know to design and build a successful kitchen garden now and plant it in the spring. Fall and winter is the best time to methodically establish your garden patch. In the morning session, we will go over what needs to be done through this fall & coming winter to be ready to plant next March, including how to kill sod without poison, how to make growing beds, how to compost, etc.

In the afternoon, we will focus on plants with topics such as plant & cultivar selection of fruit, vegetable and herbs; sourcing; indoor & outdoor seed sowing; other propagation techniques; transplanting; growing, maintaining & harvesting.

Growing & Cooking with Herbs

In mid-summer, many herbs reach a peak of lushness and flavor. Come and learn about the lore and cultivation of reliable favorite herbs - as well as more unusual ones. This is the prefect time to harvest many herbs to dry, to make herbal vinegars, unusual ice-teas, etc … We will show you how. Also learn how to incorporate herbs in your everyday cooking and in simple yet sophisticated special dinner dishes! We will demonstrate the making of several dishes featuring herbs (appetizer, main, side, dessert) and give you recipes to replicate at home – but only after you’ve had a chance to sample everything we made.

In this workshop, we’ll learn to make sorbets & ice-creams using our abundant summer fruit, as well as fruit mousses, and spectacular layered cold desserts. We don’t need to heat-up our kitchen to produce dreamy refreshing desserts! Recipes and degustation included.
