Cookery Workshop: Fall

The cooking class series “Un Dimanche A La Campagne” or “Sunday in the Country” teaches students simple ways to create flavorful and healthy meals from local seasonal ingredients, using fresh vegetables, fruit, herbs and meat/poultry sourced from small local farms.

 

We also discuss the art of building a menu and we thoroughly go through preparation timing, so you can easily reproduce the whole menu on your own for entertaining.  The classes are lively with lots of practical tips, tangents into gardening, food history, vegetable storage, dish variations etc. The classes are small in size and students are invited to participate. Recipes provided.

 

Attend one or every classes (discount available when registering for several classes at once).

 

November can feel like early winter (in the old European calendar, November was considered winter). In the mid-Atlantic area, we start to rely again on root crops, hardy greens and the last of the stored summer crops. Apples are versatile both in sweet and savory preparations. We will make:

· Apple & Parsnip Soup

· Venison (or Beef) Provencal-style Daube

· Creamy Polenta

· Upside-Down Cranberry Cake

Growing & Cooking with Herbs

In mid-summer, many herbs reach a peak of lushness and flavor. Come and learn about the lore and cultivation of reliable favorite herbs - as well as more unusual ones. This is the prefect time to harvest many herbs to dry, to make herbal vinegars, unusual ice-teas, etc … We will show you how. Also learn how to incorporate herbs in your everyday cooking and in simple yet sophisticated special dinner dishes! We will demonstrate the making of several dishes featuring herbs (appetizer, main, side, dessert) and give you recipes to replicate at home – but only after you’ve had a chance to sample everything we made.

Very Cool Desserts

Thursday June 25  – 1:30 PM 5:30 PM

In this workshop, we’ll learn to make sorbets & ice-creams using our abundant summer fruit, as well as fruit mousses, and spectacular layered cold desserts. We don’t need to heat-up our kitchen to produce dreamy refreshing desserts! Recipes and degustation included.
