Spring food is green: from the earliest ramps and asparagus of April to the delicate salad greens and tart sorrel of May, and the peas of June. Only later in the season do other colors arrive with pink radishes, barely tipped with white, perfumed crimson strawberries, and finally jewel-like currants and dusty blue blueberries in late spring.
