    I have a Ball preservation book and it tells me that dehydrated zucchini can only be kept for 1 month. What is the point then?
    Also is it possible to can cubed zucchini with out it becoming mushy?

    Hi Pat, I have 2 year-old dehydrated zucchini from the year there were so many zucchinis… one month indeed, what would be the point? Fully dehydrated and kept in very dry, dark and cool conditions, dehydrated veggies will keep for quite a while (although are better consumed within a year).

    Unless you are pickling zucchinis, you need to use a pressure canner – that means mush! No way around it… but pickling.
